This is a prime example of a great allrounder pan – one that is built to last. Its five-ply, rimless design features three layers of aluminum between two stainless steel for super fast heat up times and great heat retention. It’s ideal for high-heat searing but can also be used in the oven up to temperatures of 240 degrees celsius. This isn’t quite as high as some others on this list but it is good enough for most oven-based needs.
In my tests I found it supremely easy to use. It has a comfortable ‘stay cool’ handle, which does retain some heat but it’s never too hot to touch. I mostly used it for searing meat and made a few risottos in it too.

It’s a little on the expensive side but I really like this pan. It’s a nice size (20cm) for smaller cooking tasks and would be perfect for solo cooks or kitchens short on space as its USP is that it has a folding handle, which reduces its size by 50 per cent.
It’s not just a gimmick, though. This 3-ply pan has a robust construction and nice, high sides making it suitable for a variety of tasks from searing to slower cooking. I’m also fond of the polished exterior, which many manufacturers seem to be moving away from nowadays.
As well as being safe for induction (like all the pans of our list), it’s also oven-safe up to a whopping 232 degrees celsius or gas mark 8.

I’ve tested a few pieces of cookware by Samuel Groves over the years and I’m very fond of the quality. While they are a little on the expensive side, I do think they are well made and this pan comes with a full lifetime guarantee, meaning you can potentially have it replaced and fixed forever.

The pan is tri-ply and has a long, structured handle allowing you to stay well away from the heat while cooking. If you want to keep your spend to under £50, you can pick up a 28cm stainless steel pan from John Lewis’s own range for £42, or smaller sizes for even less. It’s worth pointing out that there are some clear compromises you’ll be making at this price.
The construction isn’t as good as expensive models. This pan is made mostly from stainless steel, rather than aluminium and has a disk bottom rather than being fully clad, which can inhibit heat distribution on some hobs. I wont sit here and pretend that almost £200 is a normal price for a stainless steel pan. However, if you’re familiar with Le Creuset, you’ll know the brand name comes with a price and that price is usually a couple of hundred quid.
The pan isn’t bad, either. It has a durable tri-ply design and unlike the other offerings on the list, also comes with a helped handle – ideal if you find carrying full pans strenuous. It’s a good-looking pan with lovely deep sides and despite it being on the expensive side, has hundreds of 5 star reviews from very happy customers.

Those on a budget won’t be disappointed with John Lewis’s home-grown offering but will need to make a few sacrifices in order to save.
Meanwhile, those short of space should seriously consider Joseph Joseph’s foldable stainless steel pan – perfect for solo households and small kitchens.
